Catering for a private flight out of Aspen is usually sourced from restaurants and caterers in town, packed for the aircraft and delivered to the FBO, Atlantic Aviation at Aspen/Pitkin County Airport. It works well with a day's notice and a clear list. It goes wrong when it is ordered late, in a holiday week, for an early departure.

Passenger count, crew meals, departure time, tail number and FBO, allergies, and whether the crew wants it plated or packed for the galley. A day's notice is the practical minimum; two for large orders or holiday weeks.
Most private flights out of Aspen are catered by local restaurants and caterers rather than a dedicated flight kitchen. That means the menu can be excellent, but the packing has to be done for an aircraft: sealed, labelled and easy to plate in a small galley.
Every container labelled with contents and allergens, reheating instructions for the crew, and passenger meals separate from crew meals.
Delivered chilled to the FBO ahead of the crew's loading window, not at the passengers' departure time. For a 7 a.m. wheels-up, that means the order is ready the night before.
Someone confirms the handover with the FBO and the crew, and has a plan if the departure moves. In a snowstorm, catering for a flight that slips three hours is a real problem to solve.
During the closure, catering ordered in Aspen has to be driven to the departure airport: about 1 hour 15 minutes to Rifle or Eagle, longer if Glenwood Canyon work slows the drive to Eagle. Order earlier, pack for the drive, and coordinate the handover with Signature at Eagle or the FBO at Rifle.
Mostly local restaurants and caterers, coordinated through the FBO (Atlantic Aviation at ASE) or by the passenger's own team. The FBO lists concierge services and an on-site café but no named flight kitchen.
Plan on at least a day, and two for large orders, early departures or holiday weeks, when the ramp is congested.
To the FBO, Atlantic Aviation at 69 East Airport Road, timed to the crew's loading window rather than the passengers' departure time.
From April 4 to November 19, 2027, departures use Eagle, Rifle or Grand Junction, so catering from Aspen has to be driven to the aircraft. Order earlier and pack for the journey.
